This is currently my favorite thing to eat ever since my husband decided to make it for me. It’s very simple to make and does not take long at all. This is the type of meal that you will want to make extra of for leftovers later just because of how scrumptious and filled with flavor is it. The recipe that I’m giving you is the one that we make because it’s fast and easy, however, if you want to take the time to make your own Thai peanut sauce, you can. This recipe is also easily gluten free (just check your sauce and chicken seasoning). It can also be a Vegan meal if you choose to omit the chicken as just the noodles and sauce alone are amazing!

Serving Size: 8 servings
Here is what You need:
* 8 chicken breasts (you can buy your chicken breasts raw and either bake or boil them. You can buy a bag of precooked frozen breasts, where all you have to do is heat them in the oven for 20 minutes (like we do), or you can purchase ready to eat chicken at Chick-Fil-a and add them into the recipe.)
*Thai Peanut Sauce (We buy it at the grocery store in bottle already made, I recommend two bottles. )
*1 bag or 1 pound Rice Noodles
* 1 TBSP. Canola Oil
*Creamy Peanut Butter (This helps control the heat and spiciness of the dish, we usually add 4 TBSP. peanut butter to achieve a mildly spicy sauce. The More peanut butter you add, the less spicy it will be.)
What You Need To Do:
1.) Prepare your chicken, whether you are baking or boiling raw chicken, heating up pre cooked chicken, or getting your chicken from Chick-Fil-a.
2.) Add rice noodles to a boiling pot of water and cook until soft, which does not take long.
3.) Prepare your sauce by adding thai peanut sauce, peanut butter, and canola oil into a sauce pan. Cook on medium heat, stirring frequently to blend the peanut butter.
4.) Once your chicken and rice noodles are cooked and your peanut sauce is smoothly blended and heated, you are finished cooking.
5.) Make a bed of rice noodles on your plate, followed by the chicken, then the sauce.
